Green Coffee Smoothie
Everyone is drinking smoothies these days. Green smoothies! When did that happen?
I think it’s really cool, actually. That people are willing to hide veggies in a drink and enjoy it. I don’t care how you have to get your vegetables in, just do it. If it needs to be masked by some (read: a lot) almond butter, a date or two and some coconut milk, I’m with it.
There is no wrong way to do a smoothie. Any fruit, vegetable or nut butter you prefer can work really well.
I’ve put apples in my smoothies. Carrots, even. And seasonings are a good addition too! Turmeric, anyone?
Smoothies are my go-to breakfast choice after a workout or when I know I’m going to have a busy morning. Nothing gets easier than just dumping all your ingredients in a blender, putting the top on (don’t forget this step. seriously, don’t forget!) and hitting blend. In under 2 minutes you’ve got a delicious smoothie at your fingertips.
I like to get creative with my green drinks. And sometimes they’re not even green! But today’s smoothie was.
I had just finished a 6:30am home yoga practice to start this fine Friday morning. And I was working from home so I could take my time hopping online. After a quick shower, lighting my sage stick (#woowooAF) and setting up my workspace, it was smoothie time.
Earlier this week I had done a bunch of meal prep so that I wasn’t spending hours in the kitchen after coming home from work. One part of that meal prep were my decaf coffee ice cubes.
So easy to make and great to add to some almond milk or to a smoothie like I did. You can either make a fresh batch of coffee or use leftover coffee (is that a thing?) pour into an ice tray and leave it be. Simple. Easy. Delicious.
You can even spice them up with a little bit of cinnamon or a slight drizzle of honey to have a sweeter iced coffee when you’re ready. Keeping these ice cubes stocked in the fridge will always be a good idea.
